Rebel Cheese, a prominent vegan cheese maker based in Austin, Texas, announced the closure of its bistro located at 2200 Aldrich St., suite 120. The closure will take effect on December 24, 2023, as stated in a newsletter sent out on December 16. Despite the bistro’s closing, the company reassured its customers that it will continue to thrive through its extensive distribution network and online sales.
The newsletter emphasized that another plant-based business will move into the space, although details about the new tenant were not disclosed. It highlighted that this new establishment “shares the same heart that we do,” indicating a commitment to plant-based offerings. As of now, the Texas Department of Licensing and Regulation has not yet updated its records to reflect any new projects at the address.
In a bid to maintain customer engagement during the transition, some of Rebel Cheese’s popular products will remain available at the deli case, including certain favorite sandwiches. Staff from the bistro will also be transitioning to roles with the incoming tenant, ensuring continuity for both employees and customers.
As the closing date approaches, customers can enjoy a 20 percent discount on grocery items and wine until 15:00 on December 24. Gift cards will still be accepted for online purchases, and customers can activate their gift cards by emailing [email protected].
Rebel Cheese has experienced rapid growth since its inception in 2019. The company faced significant challenges early on, particularly due to the Covid-19 pandemic, which forced a pivot to online sales and wholesale distribution. Today, it operates a 9,000-square-foot factory and supplies its vegan cheese products to hundreds of locations across the United States and Canada.
The business gained notable recognition after appearing on the television show Shark Tank in 2023, where investors Mark Cuban and Lori Greiner invested $750,000 for a 10 percent stake in the company. This exposure has helped solidify Rebel Cheese’s position in the competitive vegan food market.
For customers who will miss the bistro experience, Rebel Cheese still operates a location in Manhattan, New York. The company expressed gratitude for the support from its team and customers, stating, “Though we are still a small team, we’ve been so fortunate to have seen such growth and the loyalty of team members and customers alike.” Looking ahead to 2026, Rebel Cheese aims to focus on expanding its e-commerce and wholesale operations while continuing to serve customers at its New York location.
